Salsa Cruda – Creamy, Tangy & Totally Raw

Introduction

Sometimes it’s called “guacamole”, sometimes “guaca-salsa”, but the real name? Salsa Cruda. Whatever you call it, one thing’s for sure — everything in this salsa is raw (that’s what cruda means).

This bright, tangy, and creamy salsa is simple but hits all the right notes — acidity from the tomatillos and lime, creaminess from ripe avocado, and a punch of heat from serrano chiles. I love adding avocado for that smooth texture, though purists might leave it out. Either way, this one’s versatile.

💡 My favorite move? Slather it over pescado zarandeado or grilled seafood. But don’t stop there — it’s perfect on simple tacos or even as a dip for chips.

Ingredients

Salsa Cruda (Yields: 1 Pint)

  • 345g tomatillo, quartered

  • 85g avocado

  • 50g white onion, large dice

  • 25g serrano chiles, cut into small pieces

  • 16g garlic, whole cloves

  • 25g cilantro, chopped

  • 5g Diamond Crystal kosher salt

  • 52g lime juice, fresh squeezed

Instructions

1️⃣ Blend It All (But Keep It Chill)

  • Add tomatillos, avocado, onion, serrano chiles, garlic, cilantro, salt, and lime juice to a Vitamix (or similar blender) fitted with a tamper.

  • Run the machine on level 3 and use the tamper to push ingredients into the blades.

  • Blend and pulse until a semi-smooth texture is reached — think creamy, but still with a bit of texture.

⚠️ Important: DO NOT blend on high — it’ll turn into a weird, frothy mess. Low and slow is the move here.


Tips & Tricks

🔥 Avocado adds creaminess, but feel free to skip it if you want a thinner, brighter cruda.
🔥 Adjust heat by adding more serranos if you want a spicier kick.
🔥 For extra texture, top your salsa with diced onions and chopped cilantro before serving.
