This variation first made its way onto our fish taco set at Čálli, and it stuck with me. Tomatillos bring a brighter, crisper texture that doesn’t turn soggy like tomatoes. It’s perfect for tacos, seafood, or straight-up scooped with chips.

Ingredients
Pico de Gallo Verde (Yields: 1 Pint)
350g tomatillo, small dice
85g red onion, small dice and deflamed
35g cilantro, chiffonade
30g lime juice, fresh squeezed
10g serrano chile, small dice
5g Diamond Crystal kosher salt
Instructions
1️⃣ Mix It Up
Combine all ingredients in an appropriately sized bowl. Mix well to incorporate.
2️⃣ Taste & Adjust
Season to taste with more salt or lime juice as needed. Done. That’s it.
