Chipotle Salsa – Smoky, Tangy & Totally Addictive
Introduction
Technically, this one falls under the “salsa verde” family — thanks to tomatillos. But let’s be real: this ain’t your basic green salsa.
The addition of chipotles in adobo gives it smoke, depth, and backbone. It’s got something to say. And it says it loud.
🔥 My favorite way to serve this? On carnitas tacos. The acidity slices through the porky richness, while the smoky chipotle echoes the caramelization. It’s a vibe. It also makes a killer table salsa with chips.

Ingredients
Chipotle Salsa (Yields: 1 Pint + ¼ Cup)
484g tomatillos, whole (about 10–12 medium tomatillos)
50g garlic, whole cloves in paper (about 10 cloves)
85g white onion, large chunks (about ¾ cup)
75g chipotles in adobo (about 4–5 chipotles + adobo sauce)
7g Diamond Crystal kosher salt (1 ½ teaspoons)
1g chicken bouillon (¼ teaspoon)
100g water (about ⅓ cup + 1 tablespoon)
Instructions
1️⃣ Roast Everything
Preheat your broiler to high.
Arrange the tomatillos, garlic, and onion on a sheet tray.
Broil until blackened and tender, turning as needed.
Tomatillos: ~17 minutes
Onion: ~17 minutes
Garlic: ~12 minutes
(Alternatively: Use a comal or cast iron skillet to char.)
2️⃣ Blend It Up
Add the chipotles, garlic (peeled), onion, water, and seasonings to a blender.
Blend until nearly smooth.
Add roasted tomatillos and blend on low until your desired consistency is reached.
Taste and adjust with more salt or bouillon as needed.
Tips & Tricks
🔥 Too smoky? Dial back the chipotles or add more tomatillo.
🔥 No broiler? A hot comal works beautifully for roasting.
🔥 Want it hotter? Add a raw serrano or a splash of adobo sauce.
