Salsa Verde Taquera – Bright, Spicy & The Ultimate Taco Salsa

Introduction

You know it. You love it. (Unless you’re Team Red Salsa… gasp! Kidding, I love them both.)

But salsa verde just hits different. It’s got texture, tang, salt, and spice—everything you want in a taco salsa. And let’s be real: Mexicans season their tacos with limón y salsa. Salsa is a seasoning, not just a topping. It needs to stand up to everything else in the taco.

To me, salsa verde is a must on a taco de lengua (massively underrated, by the way). It cuts through the fattiness of the meat with acid and spice, balancing everything out.

This version? Super green, super vibrant, and absolutely essential.

Tomatillos!

Ingredients

Salsa Verde Taquera (Yields: 1 Pint)

  • 315g tomatillos, husked

  • 40g serrano chiles, stemmed

  • 30g white onion, large chunks

  • 20g garlic cloves, peeled

  • 220g water

  • 5g Diamond Crystal kosher salt

  • 2g Knorr chicken bouillon

  • 15g cilantro, blanched (weight before blanching)

Instructions

1️⃣ Simmer the Base

  1. In a pot over medium-high heat, add tomatillos, serranos, onion, garlic, and water.

  2. Cook just under a simmer for about 15 minutes, stirring gently to cook evenly.

  3. Strain and reserve the cooking water.

  4. Transfer the cooked ingredients to an ice bath to cool.

2️⃣ Blend Until Smooth

  1. In a blender, add the cooled tomatillo mixture, salt, Knorr bouillon, and blanched cilantro.

  2. Purée until smooth.

  3. Taste & adjust with extra salt or bouillon if needed.

  4. If too thick, thin it out with some reserved cooking water.

  5. If too acidic, a pinch of sugar helps round it out.

Tips & Tricks

🔥 Blanched Cilantro = Vibrant Green → Keeps the salsa from turning brown.
🔥 Adjust Heat to Taste → Add more serranos if you like it spicier.
